Mix maida, salt, and water to make a smooth dough. 2. Divide the dough into small balls and roll each into a thin roti. 3. Brush ghee on one roti, place another on top, and repeat until you have 6-7 layers. 4. Roll them together into a large thin sheet. 5. Lightly cook on a tawa without browning. 6. Separate the layers carefully and cut them into rectangular samosa sheets. Step 2: Preparing Samosa Filling Ingredients: 1 onion (chopped) 1 tbsp ginger-garlic & green chili paste 250g chicken (minced or shredded) Mixed veggies (optional) 1 tsp chilli flakes 1 tsp black pepper ½ tsp jeera (cumin) powder ½ tsp dhaniya (coriander) powder 1 tsp Kashmiri red chili powder 1 tsp garam masala Instructions: 1. Heat oil in a pan and sauté chopped onions. 2. Add ginger-garlic & green chili paste, cook until fragrant. 3. Add minced chicken and cook until fully done. 4. Mix in the veggies and all the spices. Cook for a few minutes until well combined. 5. Let the mixture cool before filling. Step 3: Assembling & Frying 1. Take a samosa sheet, fold it into a cone, and fill it with the prepared mixture. 2. Seal the edges with water or flour paste. 3. Heat oil in a deep pan and fry the samosas until golden brown and crispy. 4. Serve hot with chutney or ketchup. Enjoy your homemade crispy samosas!
