
Planked and Seared Salmon on a Bed of Sautéed Spinach and Mushrooms with Capers and Lemon
My wife asked me to make one of her favorite dishes: Planked Salmon. She loves it with asparagus or spinach, so we went with sautéed spinach and mushrooms. She LOVED it! We took it to 130F internal before searing it lightly with a torch and letting it rise to 135F while resting. While the salmon was cooking, we sautéed some mushrooms and spinach in a new pan I bought, called the Always Pan Pro, from a company called Our Place. It is quite expensive as far as pans go, but we have good experience with some of their other products, so I decided to give it a try…so far so good.
