This Low-Carb Strawberry Mousse recipe makes clouds of strawberry goodness. This easy recipe is egg-free, and free of added sugars . Delicious, healthy and so satisfying you will want to make more :) Keto Strawberry Mousse: serving 4 small bowls Jam Filling: 166 gm sliced strawberries ( 1 cup) 3 tablespoon low carb sugar Mousse: 200ml cream 3 tablespoon low carb sugar 1 teaspoon vanilla 3-4 tablespoon jam filling 1 teaspoon agar agar/gelatine 1 tablespoon water Method: In a pot add strawberries and cook on high heat for 3-4 mins. Add sugar and cook for 1 more min and set aside to cool down completely. Add cream, vanilla and low carb sugar and beat until form soft peaks. Mix 3 tablespoon of jam to whipped cream and gently fold in to the cream. Add water to the gelatine/agar agar mix and heat in the microwave for 15 seconds. Add in the heated gelatin to the mousse and combine well. Refrigerate for 3-4 hours or overnight.
