Shepherds Pie for when it’s cold outside

Corporate to Chef Episode 15: Shepherds Pie. A cold weather classic. Delicious, pie with minced lamb and topped off with mashed potato. Recipe below: 1. Throw ~500g minced lamb into a pan on medium high and cook out the moisture out and then fry until it golden brown ~7 mins, then add in 1 finely diced onion, carrot and stick of celery (If your pan is too small remove the mince first) 2. Cook this all off for ~5 mins, add in 2-4 cloves of minced garlic and cook until fragrant 3. Add in 2tbs of tomato pure, fresh rosemary, thyme and a bay leaf, then deglaze with 250ml of red wine 4. Reduce wine and add 300mg of stock (beef or chicken) - then simmer on low for an hour 5. Peel, boil and mash 1KG of potatoes. Add a large knob a butter, one egg yolk, some thick cream or full fat milk and a healthy amount of grated cheese. (parmesan or mature cheddar) 6. Add the lamb mix to a baking dish (or keep in cast iron) then top with your mash and score a few lines with a fork 7. Grated some extra cheese on and oven on 200c until golden brown (~30) 8.
