HOW TO MAKE JAMBALAYA IN THE INSTANT POT

Easy Jambalaya in the Instant Pot recipe. Traditional Louisiana Jambalaya recipe in less that 30 minutes. Shopping Lis: 2 teaspoons olive oil 12 ounces Andouille sliced into 1-inch rounds 6 ounces boneless skinless chicken breast cut into 1-inch chunks 1 small onion diced 1 small red bell pepper diced 1 stalk celery minced 1 clove garlic minced 2 cups chicken stock 2 cups long grain white rice rinsed well 2-3 tsps. Cajun Seasoning depending on your spice preference ½ tsp. dried thyme leaves 1 dried bay leaf 15 ounces diced tomatoes ½ tbsp. hot sauce optional 1 tsps. Worcestershire Sauce 1 pound small frozen pre-cooked shrimp, peeled and deveined, tails off Parsley for garnish Directions: Turn on the Instant Pot and select the saute function. Add the oil. When the pot display reads "hot" add the onions, bell pepper, celery, chicken and andouille sausage with a pinch of salt. Sauté until the chicken is white and the veggies are soft. About 7-10 minutes. NOTE: DO NOT SAUTE WITH THE LID ON! Next, add the garlic and saute about 30 seconds. Next, press the cancel button then add about 1/4 cup of room temp chicken broth and use a wooden spoon to scrape the bottom of the pot to deglaze for any stuck on brown bits. This is important. If you don't do this the pot may yield a burn notice and the pot may not come to pressure. After deglazing, add the remaining chicken broth, dried thyme leaves (not ground thyme) and 1/2 Cajun seasoning. Stir. Measure out the rice and rinse well to remove excess starch. Repeat with fresh cool water as many times as it takes for the water to become clear. Otherwise the rice when cooked will become sticky. Add the rice to the pot. Do not stir. Just press down below the liquid. Add the diced tomatoes. Add the bay leaf. Replace the lid making sure the valve/switch is set to the seal position. Press the pressure cook or manual button making sure it's set to high pressure. Adjust cook time to 3 minutes. Press start. After 3 minutes let the pot naturally release pressure. Wait for the lid pin to drop before removing the lid. Remove the lid, remove the bay bay leaf and stir. Turn the pot off. Toss the shrimp with the remaining Cajun seasoning. Add the frozen pre-cooked shrimp to the pot with a sprinkle of hot sauce and Worcestershire. Stir. Replace the lid and let the residual heat warm the shrimp. Let sit for about 3-5 minutes. NOTE: if using raw shrimp, thaw first then let it sit in the pot for about 10-12 minutes to thoroughly cook the shrimp. Salt to taste.
