Ingredients: 3/4 pound ground beef 2 ounces cream cheese 1 jalapeno, chopped 1/2 cup chopped onion 1 tablespoon taco seasoning 10 uncooked jumbo shells 2 tablespoons butter 1 cup green salsa 1/2 cup mozzarella cheese 1/2 cup Mexican blend cheese 1 cup crushed tortilla chips 1/2 cup sour cream Lettuce and ripe olives for garnish Directions: Brown the ground beef in a medium skillet over medium-high heat. Add chopped onion and jalapeno to the beef and cook for 2 minutes. Reduce the heat to medium-low and add the cream cheese and the taco seasoning. Cook for 5 minutes, or until the cream cheese is melted and the mixture is well combined. Cook the jumbo shells according to the package instructions. Toss them with 2 tablespoons of butter. Sprinkle the crushed tortilla chips over the cheese. Bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
