
Easy One-Pan Creamy Salmon and Spinach Pasta: A Perfect Weeknight Dinner
This recipe for Creamy Salmon and Spinach Pasta is the perfect solution for a delicious and easy weeknight dinner. With a one-pan preparation, it's perfect for busy weeknights. To start, you'll need 1lb of salmon filet (skinless), pasta of your choice, 1/2 cup of diced red onions, 2-3 cups of spinach (3-4 for baby spinach), 1 tablespoon of minced garlic, 1/2 cup of white wine, 1 cup of heavy cream (sub. whole milk or half & half), 1/2 cup of freshly grated Parmesan cheese, and 8oz of freshly shredded Mozzarella cheese. For the salmon seasoning, you'll need 2 tsp of salt, 1 tsp of black pepper, 2 tsp of Cajun seasoning, 2 tsp of garlic powder, 1 tsp of onion powder, and 2 tbsp of fresh thyme. Begin by seasoning the salmon with salt, black pepper, Cajun seasoning, garlic powder, onion powder, and thyme. Heat a large pan over medium-high heat and add a tablespoon of oil. Once the oil is hot, add the salmon and cook for about 3-4 minutes per side or until it's golden brown and fully cooked. Remove the salmon from the pan and set it aside. In the same pan, add the diced red onions, and minced garlic, and cook until softened. Then, add the white wine and let it cook for a couple of minutes until it's reduced by half. Then, add the heavy cream, grated Parmesan cheese, and shredded Mozzarella cheese. Stir until the cheese is fully melted. Add the cooked pasta and spinach, and toss everything together until the pasta is fully coated with the sauce. Crumble the cooked salmon over the top of the pasta.
