A slow Saturday filled with FOOD, movement, and chill weekend vibes! 🥑🏋️♀️❄️ This is my realistic What I Eat in a Day on a Saturday (aka my day off!) where I balance healthy meals, working out, grocery shopping, and just having a cozy, productive weekend. I’m sharing 3 super easy, delicious recipes including my homemade granola, a fresh & protein-packed lunch, and a warming cauliflower lentil curry for dinner. Recipe details below!👇🏼 🥣 BREAKFAST – Homemade Granola & Matcha Granola Recipe: 🥄 3 tbsp coconut oil 🥜 2 handfuls of mixed nuts 🎃 1/3 cup pumpkin seeds 🌻 1/3 cup sunflower seeds 🥣 1 cup oats 🍯 3 tsp lavender honey 🍁 2 tbsp maple syrup ✨ Cinnamon to taste Mix everything, bake at 160°C (320°F) or in a pan until golden & crunchy! Enjoy with yogurt & fruit. 🏋️♀️ Mid-Morning: Gym Workout A quick weight-lifting session to feel strong & energized! 🔥 🥗 LUNCH – Fresh & Easy Protein Salad 🥒 Cucumber, carrots, tomatoes (only for me, not for Matthew 😂) 🥑 Avocado 🐔 Grilled chicken (cooked in coconut oil) 🧀 Cottage cheese 🌿 Olive oil, balsamic, salt & pepper Super quick, high in protein & healthy fats, and keeps me full for hours! 🍛 DINNER – Cozy Cauliflower Lentil Curry Since my kitchen was already a mess, I prepped dinner right after lunch!
