This time is No-knead no-rule turmeric sourdough bread boule. People say baking sourdough bread is a journey. It’s true or not, sometimes I found myself baking my way. I did not follow what I have learned. This bread is an example. While it was in bulk fermentation I felt sleepy, so my dough went to sleep in the fridge. The next day I performed the 2nd coil fold 1 hour after the first one. Luckily, the bread was beautiful, big ear, crusty outside, tender crumbs with holes. Ingredients: Brought starter out at 12:45pm, feed 4:00pm: 200g BF 80g WW 50g dark Rye 4g turmeric 8g olive oil 265g water Autolyse 60g starter from 12:45 fed , feed 6:20pm, mix 8:20 1st sf 8:40 2nd sf 10:40 fridge 5:40 out 6:00am, lamination 6:10, 1st cf 7:10, 2nd cf 7:30 bannetone 8:30 freezer Preheat oven 475°F Score,bake 20’ lid on 425°F , 15’ lid on.
