This is how you can make a high-protein, low-carb cheesecake using one of my favorite protein hacks: cottage cheese This is such a great twist if you love Cinnamon Toast Crunch. For the Cheesecake Base: 1 tub (16oz) of a GOOD cottage cheese- 1 cup Greek yogurt (or whipped cream cheese) 2 eggs-4 tbsp powdered monk-fruit-1.5 tbsp cinnamon A splash of vanilla extract Blend everything until smooth, pour into a round oven-safe dish lined with parchment, and bake at 350°F for 40-45 min until set. Let cool completely (seriously, don’t rush this part), then refrigerate overnight—again, dont rush this part. Its important. For the Whipped Topping: 1/2 cup room temp whipped cream cheese- 2 tbsp powdered monkfruit-1 tsp cinnamon Mix well and slather it on top.
