Butterscotch pecan mug cake Prep: 5 mins Cook: 3 mins Serves 1 EASY Butterscotch sauce: 1 tbsp salted butter 3 tbsp soft light brown sugar 3 tbsp double cream 2 tbsp soft light brown sugar 4 tbsp self raising flour 2 tbsp vegetable oil 1 egg 10g pecans, roughly chopped 10g fudge pieces 1. Microwave the salted butter, light brown sugar and double cream in the mug for 30 seconds on high until golden and bubbling. Pour half of the sauce into a separate dish. 2. Mix the sponge ingredients into the mug, until smooth and combined. Microwave on high for 1-2 mins until risen and puffed up. Pour over the remaining sauce and serve with cream or ice cream.
