Lite Fluffy Donuts Part 2 - Cooking and Topping your doughnuts

Part 2 will show you to roll out dough, cook and place final toppings on donuts. Ingredients • 1 and 1/2 cups milk, lukewarm (whole milk or 2%) • 1 stick unsalted butter ( 1/2 cup ), room temperature • 4 and 1/2 teaspoons active dry yeast • 3 large eggs, room temperature • 6 tablespoons sugar • 1 and 1/2 teaspoons salt • 5 cups + 1/4 cup + 2 tablespoons all purpose flour, divided • additional flour for dusting • vegetable oil, for deep frying Glaze • 3 cups confectioners sugar • 5 to 6 tablespoons water • 1 and 1/2 teaspoons vanilla extract • 2 pinches salt Instructions 1. Combine the ingredients milk through Salt and 2 cups of Flour(All Purpose or Bread). Beat on a medium speed for 2 to 3 minutes. Dough should look like batter. 2. Switch to dough hook & add the remaining ingredients and mix for approx 3 minutes or until you have a dough ball. 3. Ensure work surface is covered with flour, roll dough out to a thickness of 1/2 to 3/4 inch. Using donut or cookie cutter, cut dough. 4. Place donuts onto a floured cookie sheet, cover with a kitchen towel and let rise for 45 to 60 minutes. 5. Line another baking sheet with paper towels and place cooling rack on it. 6. Place oil into a large pan for frying, heat oven to 320 to 330 degrees. (use a fry thermometer. Fry donuts on each side for approx 1 minute. Remove to rack and let cool. Making Glaze 1. Whisk glaze ingredients into a bowl. Start with 2 cups and a few tablespoons of water until mixture is smooth. Add confectioners sugar or water as needed. 2. Dip donuts in glaze and set on cooling rack. Let sit for 20 minutes. Enjoy!!!!!!!!!!!!!!!!
