For yeast, I’m using 1.5 teaspoons of instant dry yeast—no need to activate, just mix it right in. If you prefer active dry or fresh yeast, follow the package instructions. Planning an overnight rise? Cut the yeast in half for deeper flavor. Now, 325g of high-protein bread flour goes in—this gives the best chew and structure. mix bread flour with all-purpose flour too, and it’ll still turn out great. Add 1 teaspoon of salt and mix the dry ingredients well—this keeps the flavor evenly distributed. Now, combine everything. No kneading needed—just mix until there are no dry bits. If the dough feels stiff, add a little water. Different flours absorb differently, and we want a soft, well-hydrated dough—that’s the secret to great bread. 2-First Rest & Stretch and Folds Cover the dough and let it rest for an hour—this helps the flour absorb the water, making it easier to work with. After an hour, the dough has grown. Now, let’s strengthen it with a stretch and fold. Take one side, stretch it up, and fold it over. Rotate the bowl and repeat on all four sides.
