Today is the 9-week anniversary of the transition from Keto to Plant Based Whole Food following the Mastering Diabetes method. It's been a bumpy road so far with an incredible amount of low blood sugars, I find I'm making lots of errors and the knock-on effect of doing so is lows and highs due to the insulin sensitivity that I now have. However, the facts are that my insulin sensitivity has increased dramatically - the basal and bolus insulin consumed has fallen dramatically and yet I am eating a huge number of carbohydrates when compared with what I was eating on Keto. I hope this is of value to anyone considering the diet and I would say that its still early days, even though at times it's been a slog (and a half).
