Today’s recipe I am making a classic New Year’s side dish in the South, Black-Eyed Peas! It is tender, flavorful, so creamy it just melts in your mouth and full of bacon! Ellen’s Southern recipes playlist: • Down Home Southern Recipes 2 cups dried black-eyed peas, rinsed and discard the bad ones 1/2 pound pork or turkey bacon, chopped (if using turkey bacon, add 2 tablespoons canola or vegetable oil) 1 cup yellow or white onions, diced 4 cups chicken broth or stock (original or low sodium) 2 teaspoons garlic powder 1 teaspoon onion soup mix 1 bay leaf 1/4 teaspoon cayenne pepper Salt and black pepper (or white pepper) to taste Cook’s Note, to soak the peas (optional): Rinse them thoroughly under cool water then place them in a bowl and cover with water. Soak for 6 hours or overnight. Drain and rinse the peas and set aside. In a large pot or saucepan over medium heat, add the oil (if using turkey bacon) and the bacon and cook until crispy about 5 minutes. Drain the bacon on paper towels and reserve 2 tablespoons of bacon grease in a pan; chop the bacon into small to medium pieces and set aside. Add the chopped onions to the pan and cook until translucent about 5 minutes. Add in the peas, chopped bacon, chicken broth (or stock), garlic powder, onion soup mix, bay leaf and cayenne pepper; stir and bring to a boil, then reduce heat to medium-low or low and simmer just until the peas are tender about 20 to 30 minutes (stir occasionally so the peas won’t stick and add more liquid if necessary). When the peas have reached your desired tenderness, add in the salt and pepper to taste and remove the bay leaf. Serve with cornbread or favorite meal and a few dashes of hot sauce (if desired) and enjoy!
