Ingredients: For Kadhai Masala (Spice Blend): 1 tbsp coriander seeds 1 tsp cumin seeds 2 dried red chilies 1/2 tsp black peppercorns (optional) 1/2 tsp fennel seeds (optional) For the Curry: 2 tbsp oil or ghee 200g paneer (cubed) 1 medium onion (cubed) 1 medium green bell pepper (cubed) 2 medium tomatoes (pureed) 1 tsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chili powder 1/2 tsp garam masala 1/2 tsp kasuri methi (dried fenugreek leaves) 1/2 tsp salt (or as needed) 1/4 cup water (as needed) Fresh coriander leaves (for garnish) Instructions: Step 1: Prepare the Kadhai Masala Dry roast coriander seeds, cumin seeds, dried red chilies, black peppercorns, and fennel seeds in a pan until fragrant. Let them cool and grind them coarsely in a mortar-pestle or spice grinder. Keep aside. Step 2: Prepare the Curry Heat 1 tbsp oil in a pan and lightly sauté paneer cubes until golden. Remove and set aside. In the same pan, add another tbsp of oil. Sauté cubed onions and bell peppers on high flame for 2 minutes. Remove and keep aside. Add ginger-garlic paste to the pan and sauté until fragrant. Add pureed tomatoes and cook until the oil separates. Add turmeric powder, red chili powder, salt, and the freshly ground kadhai masala. Mix well. Add a little water and let the gravy cook for 2-3 minutes. Add sautéed onions, bell peppers, and paneer cubes. Stir well. Sprinkle garam masala and crush kasuri methi over the curry. Mix everything together and cook for another 2 minutes. Step 3: Garnish and Serve Garnish with fresh coriander leaves. Serve hot with naan, roti, or jeera rice.
