Cooking With Tammy Seasoning: https://cookingwithtammy.shop/ Smothered Shrimp and Sausage with Creole Sauce and Grits Ingredients: For the Shrimp & Sausage: 1 lb smoked sausage, sliced 1 lb shrimp, peeled and deveined 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1 tsp Creole seasoning 1 tsp shrimp bouillon powder For the Smothered Creole Sauce: 2 tbsp oil (vegetable or olive oil) 1 medium onion, diced 1 bell pepper (red, green, or yellow), diced 3 cloves garlic, minced or chopped 1 tbsp Creole seasoning 1 tsp Old Bay seasoning 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1 chicken bouillon cube (or 1 tsp chicken bouillon powder) 2 tbsp tomato paste 1 cup heavy cream 1/2 tbsp butter For the Grits: 1 cup grits (follow the instructions on the package) 4 cups water (or substitute with chicken broth or water + chicken bouillon for extra flavor) 1/2 cup heavy cream 1/2 tbsp butter 1/2 cup Parmesan cheese (grated) Instructions: 1. Prepare the Grits: In a large pot, bring the 4 cups of water (or chicken broth) to a boil. Add a chicken bouillon cube or chicken bouillon powder for enhanced flavor. Slowly stir in the grits, reduce the heat to low, and let them simmer, stirring occasionally. Cook according to the package instructions, usually about 20-25 minutes, until the grits are creamy and tender. Stir in the heavy cream, butter, and Parmesan cheese. Season with salt and pepper to taste. Keep warm and set aside. 2. Season the Shrimp & Sausage: In a bowl, mix the shrimp with the garlic powder, onion powder, smoked paprika, Creole seasoning, and shrimp bouillon powder. Toss to coat the shrimp evenly. Season the sausage slices with the same mixture (optional, but recommended for flavor). 3. Sausage & Shrimp: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the sausage slices and cook until they are browned and crispy on both sides (about 5-6 minutes). Remove the sausage from the skillet and set it aside. In the same skillet, add the shrimp and cook for 2-3 minutes per side, until they turn pink and opaque. Remove the shrimp and set them aside with the sausage. 4. Creole Sauce: In the same skillet, add the remaining oil and sauté the diced onions and bell peppers over medium heat until soft and fragrant (about 4 minutes). Add the garlic and cook for another 1 minute until fragrant. Stir in the Creole seasoning, Old Bay seasoning, garlic powder, onion powder, and smoked paprika. Cook for 1 minute to toast the spices. Add the tomato paste and stir it into the vegetables, letting it cook for another minute. Pour in the heavy cream, and stir in the chicken bouillon cube (or powder) to dissolve. Bring the sauce to a gentle simmer, letting it thicken slightly (about 3-5 minutes). Stir in the butter for extra richness and adjust the seasoning with salt and pepper as needed. 5. Combine and Serve: Return the cooked sausage and shrimp to the skillet, stirring them into the sauce. Let everything heat through for another 2-3 minutes, allowing the flavors to meld together. Serve the smothered shrimp and sausage over a bed of creamy Parmesan grits. Enjoy!!!
