Slow Cooker Corned Beef and Cabbage Recipe Ingredients: • 3-4 lb corned beef brisket (with or without spice packet) • 1 small head of green cabbage, cut into wedges • 6-8 small red potatoes, halved • 4 large carrots, cut into chunks • 1 yellow onion, quartered • 4 cups beef broth (or water) • 2-3 garlic cloves, minced • 2 tbsp apple cider vinegar • 1 tbsp Worcestershire sauce • 1 tbsp brown sugar (optional) • 1 tsp black pepper Homemade Peppercorn Mix (if not included in brisket packet): • 1 tbsp whole black peppercorns • 1 tbsp mustard seeds • 1 tsp coriander seeds • 1 tsp crushed red pepper flakes • 1 tsp whole allspice berries • 2 bay leaves, crushed • ½ tsp ground cloves Instructions: 1. Prepare the Slow Cooker: Place onions, potatoes, and carrots at the bottom of the slow cooker. 2. Season the Corned Beef: Rinse the corned beef under cold water to remove excess brine. Place it on top of the vegetables, fat side up. 3. Add Spices & Liquid: Sprinkle the spice packet (or homemade peppercorn mix) over the brisket. Add garlic, apple cider vinegar, Worcestershire sauce, and brown sugar. Pour in the beef broth. 4. Slow Cook: Cover and cook on low for 8-10 hours or high for 4-6 hours. 5. Add Cabbage: In the last 2 hours of cooking, add cabbage wedges on top of the brisket. 6. Serve: Remove the corned beef and let it rest for 10 minutes before slicing against the grain.
