Ingredients: 2-3 eggs 1/4 cup milk (optional) 1/2 cup mushrooms (sliced) 1 small onion (sliced) 1/4 cup shredded cheese 1 tbsp butter or oil 1/2 tsp chili flakes (adjust to taste) Salt and black pepper to taste Fresh herbs (optional) 2 slices of bread (for toasting) Chili oil (optional) Instructions: Heat oil in a pan over medium-low heat. Add sliced onions and mushrooms, along with a pinch of salt, black pepper, and chili flakes. Cook for 10-15 minutes, stirring occasionally, until golden brown and tender. Set aside. In a bowl, whisk eggs, milk (if using), salt, black pepper, and chili flakes. Toast two slices of bread to your liking. In the same pan, heat butter and pour in the egg mixture. Cook until the edges set, then cover with a lid and cook for 1-2 minutes to help the eggs cook through. Once the omelette is almost set, add the caramelized onions and mushrooms on one half, then sprinkle with cheese. Fold the omelette over the filling and cook for 1-2 more minutes. Remove from the pan and drizzle with a bit of chili oil (optional). Serve with the toasted bread on the side.
