Red Lentil Soup Ingredient: 2 cups Red lentils, soaked in water for 4-8 hours 2-3 tbsp olive oil 2 onions, chopped 2 carrots, diced 2 celery stalks, diced 3 potatoes, peeled and diced 4 garlic cloves, minced 1 tsp cumin powder 1 tsp ginger powder 1/2 tsp turmeric 1 tsp curry powder 2 tbsp nutritional yeasts (optional) Salt and pepper to taste 7 cups water (or more) 1/2 cup chopped cilantro Cilantro to garnish Red Chilli, optional Lemon to garnish Instructions: Wash and drain the soaked lentils and set aside Heat up a pot with olive oil and sauté onions, carrots, and cilantro, until slightly golden. Add the spices and mix for 30 seconds or so. Add the garlic and mix some more. Add the soaked lentils, mix, add the potatoes and cilantro, adjust seasonings and bring to a boil. Cover and pressure cook for 20 minutes. Once pressure has released, open the pot, mix, adjust seasonings. Serve with bread, croutons, or a nice helping of white rice, cilantro and chili.
