
MEXICAN CHOCOLATE CRINKLE COOKIES / 12 DAYS OF XMAS COOKIES
Welcome to the 4th day of xmas cookies! I am beyond excited to share this recipe with you. The first time I came across these type of cookies I knew I needed to try to bake them. Just the look of them is so cool! after trying them I was blown away, texture wise they are "crinkly" like the name, but inside it holds the most amazing texture, like a good brownie :). After messing around with several hit and misses, I think the best version of this cookie is this one with a subtle warmth of cinnamon. Visit his instagram @chepphotography RECIPE 1/2 cup unsweetened baking cocoa 1 cup of all purpose flour 1tsp baking powder pinch of salt 2 1/2 tablespoons of butter room temp 3/4 cup of white sugar 1 tsp vanilla 2 eggs 1 teaspoon of cinnamon 1/2 cup confectioners sugar ** to roll cookies. with a standing mixer or a handheld mixer, cream the butter along with the sugar, add eggs one by one, mixing well after each addition, add vanilla and pinch of salt, baking powder, cinnamon, baking cocoa and finally flour. take the dough to chill overnight, and if not possible do it for at least an hour, the more time the dough spends on the fridge the fudgier the cookie will be. the next day, take them out and turn your oven at 350F. Prepare a cookie sheet with parchment paper. With a tablespoon start grabbing pieces of dough and roll them into your hands, perfect size will be the size of a pinpong ball. Roll them into the confectioners sugar and place them into the cookie sheet.
