Recipe is very easy and this is something I send to friends and relatives a lot for the new year Ingredients: 2 cup / approx 400 gm Cashews (powdered) 3/4 cup Sugar (or as per taste) 3/4 cup Water Saffron Strands (soaked in warm water) Cardamom Powder (optional) 1 tsp Ghee Pistachios & Dry Rose Petals (for garnish) Method:- Take a mixer jar, churn 2 cup Cashews in batches to make fine powder Sieve this powder and keep aside Heat up the pan to make Chashni Add 3/4 cup Sugar Add 3/4 cup Water Add few Saffron Strands (soaked in warm water) Stir well and cook until you get one string consistency Further add 2 cup sieved Cashew Powder Keep it on the low heat Add some Cardamom Powder (optional) Give it a good mix and cook until the mixture seperates pan Add 1 tsp Ghee Turn off the heat & transfer it on a tray / butter paper Spread it even by making a thick layer Rest for half an hour to set Cut it into squares Garnish with some Pistachios & Dry Rose Petals Enjoy Delicious Kesar Kaju Barfi during festive season . .
