It's known for its rich and aromatic flavors, typically featuring rice, tender pieces of meat, and a variety of flavorful spices. Here's a basic recipe for Afghan Kabuli Pulao: Ingredients: For the Rice: 2 cups long-grain Basmati rice 4 cups water 1 teaspoon salt For the Meat: 1 lb (450g) lamb or chicken, cut into pieces 2 onions, thinly sliced 2 tablespoons vegetable oil 2 cloves garlic, minced 1 teaspoon ground cardamom 1 teaspoon ground cumin 1 teaspoon ground coriander Salt and black pepper to taste For the Garnish: 1/2 cup slivered carrots 1/2 cup raisins 1/4 cup chopped almonds 1/4 cup chopped pistachios 1/4 cup cooking oil For the Stock: 4 cups water 1 onion, chopped 2-3 cloves garlic A few whole cardamom pods, cloves, and cinnamon sticks Salt to taste Instructions: Rinse the rice thoroughly and soak it in water for about 30 minutes. Drain and set aside. In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onions and cook until they become golden brown, stirring frequently. Remove half of the onions and set them aside for garnishing. To the remaining half of the onions in the pot, add the meat pieces and minced garlic. Cook until the meat is browned on all sides. Add the ground cardamom, cumin, and coriander to the meat. Season with salt and black pepper. Stir well to coat the meat with the spices. In a separate pot, prepare the stock by bringing 4 cups of water to a boil. Add chopped onions, garlic, and the whole spices (cardamom pods, cloves, and cinnamon). Season with salt. Simmer for about 15-20 minutes to infuse the flavors. Add the rice to the pot with the meat and spices. Stir for a few minutes to coat the rice with the flavors. Carefully strain the prepared stock into the pot with meat and rice. The amount of stock should be approximately twice the volume of rice. Bring it to a boil, then reduce the heat to low, cover, and let it simmer until the rice is cooked and the liquid is absorbed. This may take about 20-25 minutes. While the rice is cooking, prepare the garnish. In a separate pan, heat 1/4 cup of cooking oil and fry the slivered carrots until they are crispy and golden. Remove the carrots and set them aside. In the same oil, fry the raisins until they puff up, then remove and set them aside. Finally, fry the chopped almonds and pistachios until they are lightly toasted. Remove and set them aside. Once the rice is cooked, fluff it with a fork and then sprinkle the fried carrots, raisins, almonds, pistachios, and the reserved fried onions over the top. Cover the pot and let it rest for a few minutes before serving. Afghan Kabuli Pulao is now ready to be served. It's often accompanied by a side salad, yogurt, or chutney.
