Irish Soda Bread - How To Make Traditional Irish Soda Bread - Ellen’s Homemade Delights

Top of the Mornin to ya and Happy St. Patrick’s Day my Friends and welcome to my Southern Kitchen! Today I am making the classic and traditional Bread of St. Patrick’s Day, Irish Soda Bread! Simple, easy, full of flavor, and the best part; no yeast, no proofing, and no rising! Everyone will love and enjoy this delicious Quick Bread! Perfect for Breakfast or a Snack. 4 cups bread flour 1/4 cup white sugar 1 teaspoon baking soda 1 1/2 teaspoons kosher salt 4 tablespoons (1/2 stick) cold unsalted butter, cut into cubes 1 3/4 cups cold buttermilk 1 extra-large or jumbo egg, lightly beaten 1 teaspoon grated orange zest 1 cup dried cranberries Ellen’s Magic: You may substitute the Cranberries for regular or Golden Raisins or Currants. Preheat Oven to 375 Degrees Line a 9x13 inch cookie sheet pan with parchment paper and set aside. In a large bowl or in a stand mixer with paddle attachment, add in the flour, sugar, baking soda, and kosher salt; whisk until well blended. Add in the butter and using a pastry cutter or fork, cut the butter in until it reaches the size of peas (If using a stand mixer, add in the butter and mix on low speed until the butter is mixed into the flour). In a measuring cup using a fork, lightly beat the buttermilk, egg, and orange zest together and stir to combine. Pour the buttermilk mixture into the flour mixture and mix until well incorporated (If using a stand mixer: with the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Next combine the cranberries with 1 tablespoon of bread flour and mix it into the dough, it will be very wet. Dump the dough onto a well-floured board and knead it a few times into a round loaf (be careful not to overmix). Place the bread loaf on the prepared cookie sheet and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes or until a toothpick in the center comes out clean. When you tap the loaf, it will have a hollow sound. Cool on a cooling rack for about 15 minutes. (Brush with some melted butter if desired). Serve warm or at room temperature with butter (if desired) and enjoy!
