Subscribe To Masala TV Recipes YouTube Channel! https://bit.ly/MasalaTV Quick Recipe: Mutton Matka Biryani - Chef Shireen Anwar - Masala Tv #matkabiryani #biryanirecipe #shireenanwar #masalatv #biryanirecipe If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this YouTube channel @ https://bit.ly/3ac5djo or go to our website: https://www.masala.tv/ ----------------------------- MUTTON MATKA BIRYANI Ingredients Handi for cooking Clarified butter ½ cup Oil ¼ cup Star anis 1 Black cardamom 1 Cloves 3 Bay leaf 1 Green cardamom 4 Black peppercorns 6 Small stick cinnamon 1 Onions 3 sliced Mutton ½ kg Ginger garlic paste 2 tbsp Green chili grinded 1 tbsp Water 1 cup ½ tsp turmeric Chili powder 1 ½ tsp Roasted and crushed cumin 1 tbsp Coriander powder 1 ½ tsp Biryani masala 3 tbsp Mace ¼ tsp Green cardamom grinded ¼ tsp Nutmeg ¼ tsp Salt 2 tsp Tomatoes 3 diced Yogurt ¾ cup Cream 1 tbsp Plums 10 Small green chilies 8 Lemon slices 3-4 Chopped mint leaves 4 tbsp Chopped coriander 4 tbsp Fried onion for topping Orange color mixed in water Ingredients for Rice Rice ½ kg soaked for 30 mins, boiled with Salt 2 tbsp heaped Mixed whole spices 1 tbsp Cumin seeds 1 tsp Green chilies 3 slit open Star anis 1 METHOD Heat handi, add oil and clarified butter to it, fry sliced onion till light golden, add whole spices with mutton, fry for 5 mins till water dries, add ginger garlic and green chili paste with ¼ cup water, cover handi, cook for 30 mins till mutton is tender, you can do these 2 steps in pressure cooker, once mutton is tender, transfer it to handi. Once the mutton is cooked, add in all the spices, fry very well, add yogurt and tomatoes, cover and cook till tomatoes get tender, cook till oil comes on top, remove ¼ cup of oil from gravy to use while layering. In another handi, grease with clarified butter, spread half the boiled rice in the bottom of handi, sprinkle some fried onion, coriander leaves on it, then spread the cooked mutton masala over rice, cover with final layer of rice, drizzle food color, leftover oil from mutton gravy and spread some fried onion and coriander leaves on top, cover the lid of pot and place a heavy pot on top, cook on high flame for 5 mins, then reduce the flame to lowest and cook for half an hour.
