Ingredients: Blueberries Monk Fruit Sugar Water Lemon Vanilla Extract Exact Measurements: 2 Cups Fresh Blueberries 1/2 Cup Monk Fruit Sugar 1/2 Cup Water 2 Lemon Zest Peels (about 3 inches long, 1/2 inch wide) Zest ONLY 1/2 teaspoon Vanilla Extract 1 Tablespoon + 1 1/2 teaspoon Lemon Juice Instructions: Add the water to a medium sized saucepan over a medium high heat followed by the monk fruit sugar and lemon juice. Stir the ingredients together until the monk fruit sugar has completely dissolved. Turn the temperature up high, bring the water to a boil, reduce the heat back to a medium high heat and add the fresh blueberries. Next remove the lemon zest peel from the saucepan. Stir thoroughly to incorporate the blueberries into the liquid mixture. Place the lid on top and allow the blueberries to cook for about 3-5 minutes. After several minutes of cooking remove the lid. Intermittently stir the blueberries throughout the remaining cooking process. Place the lid back on top, reduce the heat to simmer and allow the blueberries to cook until they begin to burst. Once the blueberries have bursted turn the heat off and remove the lid. Stir well before adding the vanilla extract and lemon juice. Incorporate the final two ingredients and transfer the sugar free blueberry compote to a bowl to allow it to completely cool before serving.
