Soak urad dal and methi seeds for 4-5 hours. 2. Drain the water and grind them into a smooth, thick batter along with ginger, using minimal water. 3. Add cumin seeds, hing, and salt to the batter. Mix well until light and fluffy. 4. Heat oil in a pan and drop small portions of batter into the hot oil. Fry until golden brown and crispy. 5. Remove and immediately soak the fried vadas in warm water for 15-20 minutes to make them soft. 6. After soaking, gently squeeze out excess water from the vadas without breaking them. Making Tamarind Chutney: 1. In a pan, add jaggery, tamarind pulp, salt, red chili powder, chaat masala, and water. 2. Cook on low flame until it thickens. Let it cool and keep aside. Making Green Chutney: 1. Blend coriander leaves, green chilies, salt, and curd into a smooth paste. Assembling Dahi Vada: 1. Take the soaked vada and place them in a serving bowl. 2. Pour fresh curd over the vadas generously. 3. Drizzle tamarind chutney and green chutney over them. 4. Sprinkle roasted cumin powder, red chili powder, chaat masala, and salt for extra flavor. 5.
