Salmon Wellington - Puff Pastry Salmon - Easy Salmon Wellington Recipe - Salmon en Croute

Salmon Wellington - also known as Salmon En Croute is a savory dish of seasoned salmon that is placed on a bed of cheesy sautéed spinach and wrapped into puff pastry dough. Serves 4 or more Ingredients: 140 g. Fresh Spinach 180 g. Cream Cheese 4 garlic cloves 2 Tbsp Olive Oil 1 Salmon Fillet Skinless 1 sheet puff pastry, softened to room temperature Flour for rolling the pastry Salt Freshly ground pepper 1 Egg (for egg wash brush) Process: Preheat your pan on a medium heat and add 2 tbsp of olive oil. Swirl the pan so the oil spreads equally and add the garlic. Toss it for thirty seconds and make sure it doesn't burn. Add the spinach and mix everything well. Cook until the spinach is wilted and immediately add the cream cheese. Stir everything well until the cream cheese is melted and the mixture is evenly combined. Remove from the stove and let it cool for a minute. In the mean time, prepare the sheet of puff pastry, dust it with some flour and roll it just a little bit. Place the cheesy spinach mixture in the center of the pastry and right after lay the salmon on top. Season with sea salt and freshly ground pepper. Instead of folding, I prefer to make a puff pastry braid, by simply cutting one inch sections from the sides to the center and braiding at one piece overlapping across the center. When everything is done, place the salmon wellington on a parchment lined baking tray and brush with egg wash. Bake in a preheated 350 oven for 40-50 minutes.
