🫕 For the Soup: 250g (½ lb) cherry tomatoes 1 white onion medium 1 red onion medium 1 red bell pepper medium 1 yellow bell pepper medium 1 orange bell pepper medium 2 tomatoes medium 1 whole garlic bulb 3 tablespoons olive oil ½ teaspoon chili flakes 1 teaspoon salt (or to taste) ½ teaspoon freshly ground black pepper 1 teaspoon dried parsley 1 teaspoon dried basil 1 cup vegetable stock 100ml (⅓ cup) heavy cream 🥪 For the Sandwich: 2 slices of toast 2 slices of cheddar cheese 1/2 cup shredded mozzarella 2 tbsp butter Instructions: 1. Roast the vegetables: Preheat oven to 200°C (400°F). Place cherry tomatoes, both onions, bell peppers, garlic bulb, and tomatoes on a tray. Drizzle with olive oil, sprinkle salt, pepper, chilli flakes, parsley, and basil. Roast for 25–30 minutes, until soft and slightly charred. 2. Blend the soup: Once slightly cooled, squeeze roasted garlic cloves from their skins. Transfer all roasted veggies to a blender and add vegetable stock. Blend until smooth and creamy. 3. Simmer: Pour the mixture into a pot, stir in heavy cream, and simmer on low heat for 5–7 minutes. Adjust seasoning if needed. 4. Make the grilled cheese: Place the cheddar and mozzarella cheese between the slices of bread. Toast in a skillet over medium heat until golden brown and the cheese is melted. 5. Serve: Pour the hot, creamy soup into a bowl, drizzle with a little cream, and enjoy with your warm, crispy grilled cheese sandwich.
