Fernando will visit La Finca Equilibrium. We go into the restaurant and meet Santi, the chef, who is preparing calçots, a type of spring onion and leek dish found mainly on the Tarragona coast. This restaurant has the unique characteristic of being based on Catalan cuisine. Then we meet Ana, the owner. A native of Madrid, she had the idea of ​​introducing Catalan cuisine to Madrid because it's largely unknown and because, she says, it can't compete with the delicious roasts prepared in the other restaurants in town. We go out to the terrace and discover a multitude of horses. Ana tells us that her whole family is fascinated by the equestrian world, and that's why they have these horses, some of them their own, others boarding horses, so that people who come for lunch can enjoy them for a ride. Finally, we move to the dining room because the calçots are already prepared. Fernando puts on his bib, dips the calçot, and eats.
