Smashing Delicious Cajun Stuffed Salmon!

Stuffed Salmon Recipe Ingredients: 1/2 bag of Spinach 5 oz of cream cheese (at room temperature) 1/4 cup of chopped Shallot 1/4 cup of chopped Green onion 1/2 cup of Sour cream 5 Garlic cloves minced 1 cup of mozzarella cheese 1Ib of peeled & deveined shrimp 3 salmon fillets Seasonings: Ol bay seasoning Creole seasoning Blackened seasoning Onion powder Garlic salt Slap ya mama seasoning Sazón shrimp seasoning Directions: In a cast iron skillet on medium high heat pour 4 Tbsp of olive oil in and sauté the minced garlic and spinach together until it shrinks down. Remove from skillet. Next season your shrimp with sazón shrimp seasoning, onion powder, Creole seasoning & ol bay seasoning. Then in cast iron skillet on medium high heat sauté your shrimp for 2 minutes on both sides or until pink and remove from skillet. Then slice 1 cup of shrimp in half and set aside. Save the other shrimp for presentation to put on top of salmon. In a bowl mix together cream cheese, sour cream, spinach, green onions, shallots, 1 cup of the sliced shrimp and mozzarella cheese and season with the above seasonings to your desired taste. Next cut a slit on the side of the salmon directly in the middle half way through the fillet to form a pocket. After forming a pocket, stuff your cream cheese filling into the salmon fillet pockets. Next season your fillets with the above seasonings. Then in a cast iron skillet pour 1 cup of oil in the pan on medium high heat and sear the salmon fillets on each side for 2 minutes or until they get a good sear and then pop them in the oven on 375 degrees for 5-6 minutes or until salmon temperature reaches 135 degrees. Serve with rice and lemons & enjoy!
