Follow along as I show you how to make light and airy choux pastry, rich vanilla pastry cream, and a sweet glaze to top it all off. 🍰 💛 Full Recipe Below ⬇️ 📝 Ingredients for 20 Éclairs: 📌 For the Choux Pastry: 250ml water 100g butter 1 pinch of salt 5g sugar 150g flour 5 eggs 📌 For the Vanilla Pastry Cream: 3 egg yolks 100g sugar 50g cornstarch (Maïzena) 500ml milk 2 vanilla pods (or vanilla extract) 📌 For the Glaze: 120g powdered sugar 20ml water White food coloring (optional) 👩‍🍳 Steps to Make Vanilla Éclairs: 1️⃣ In a saucepan, bring water, butter, salt, and sugar to a boil. 2️⃣ Remove from heat, add flour, and mix well. Return to low heat and stir until the dough dries slightly. 3️⃣ Transfer to a bowl, add eggs one by one, mixing well after each. 4️⃣ Fill a piping bag and pipe éclairs onto a baking tray. 5️⃣ Bake at 180°C (356°F) for 35 minutes (don't open the oven). 6️⃣ For the pastry cream, whisk egg yolks and sugar, then add cornstarch. 7️⃣ Heat milk and vanilla, then gradually pour into the egg mixture, stirring constantly. 8️⃣ Return to low heat and stir until thick.
