Pinterest: / rehana_thaha Twitter: https://twitter.com/Rehanaskitchen1?s=09 Ingredients Ripe Plantain 2 (not too ripe and not too raw) For the filling Ghee or butter 2 tbsp Grated coconut 1 cup Nuts chopped (Cashew/ Almonds) 2 tbsp Raisins 1 tbsp Egg 1, beaten (optional) Sugar 2 tbsp Cardamom powder 1/4 tsp Preparation 1. Try to get the plantain not be too ripe or too raw and steam cook the plantains for 10 minutes. Once it’s cooked remove from the steamer and let it cool down for sometime. 2. For stuffing : Heat a saucepan pan, add 2 tbsp ghee, first add the chopped nuts and sauté for 2 minutes then add raisins and fry for another 1 minute. Now add the grated coconut and the sugar, roast till coconut turns golden color. Add cardamom powder to it and mix it well. Add beaten eggs to the roasted coconut and scramble the eggs and mix everything together well and set aside to cool. 3. Peel off the skin, cut the plantain into two halves and remove the black seeds from it. 4. Mash the steamed plantain in the food processor or potato masher without any lumps. 5. Make into a soft dough and make small balls out of the dough. If the dough is wet add few tsp of rice flour and make into a soft dough. Please check the recipe Notes if you have a wet dough. 6. Grease the palm of your hands with ghee or oil and make the balls into round shapes and use 1 tbsp of filling and make it into an oval shape. 7. For Air Fryer: Preheat the Air Fryer for 370 degree F for 3 minutes. Grease the basket with non stick cooking spray and place the unnakaya in it. Cook it for 12 minutes and make sure to open and shake the basket half way through. Spray cooking spray and cook until golden brown. 8. For Oil Fry: Heat a nonstick pan and add enough oil, once it’s hot place the unnakaya and fry until golden brown. Transfer onto a paper towel. 9. Now our delicious Unnakaya is ready to serve hot as a snack with Tea.
