Butternut Squash Tortellini 🇮🇹 Ingredients: For the dough: 250g Tipo00 flour 1/2 tsp kosher salt 120ml water (room temperature) For the filling: 2.8lbs (1250g) butternut squash Olive oil 250g ricotta cheese 30g Parmesan cheese (grated) Pinch of salt Pinch of black pepper Pinch of ground nutmeg For the sauce: 100g butter 1/4 tsp chili flakes/ Cheyenne pepper Sage (5 leaves) 4-5 Tbsp water (cold) Kosher salt Method: 1. Place the dough ingredients in a mixing bowl and knead for about 10 min until nice a smooth dough form. It’s will look like it’s dry in the beginning but knead well and you’ll get nice and smooth dough. 2. Shape into a ball and cover with plastic wrap. Refrigerate. 3. Cut the butternut squash in the middle, remove the seeds by using a spoon. 4. Place the butternut squash on a baking sheet lined with parchment paper, drizzle with olive oil and, brush well. place the butternut squash upside down. Bake in a preheat oven at 420f (215c) for 40 min or until it’s get tender. Let it cool to a room temperature. 5. In a mixing bowl place the butternut squash, ricotta cheese, Parmesan cheese, and the spices and mix until fully incorporated. Transfer into a piping bag (you can use spoon instead) 6. Open the dough by using a pasta machine. You should get to 5-6 thickness. Cover with towel so it’s not gonna get dry. 7. Using a round cutter 2.6inch (6.8cm) diameter cut round dough pieces. 8. Place small amount of the filling in the middle and make the tortellini shape (See attached video) 9. Fill a pot with water and bring to boil. 10. Make the sauce in the meantime, Place all the sauce ingredients in a large pan. Cook over a medium flame until the butter melts and a creamy emulsion is formed in the pan. Mix a little by shaking the pan. Turn off the heat. 11. Back to cook the tortellini, when the water boiling add salt and the tortellini (make sure cook small amounts each time) cook until the tortellini floating and add another 1 min. Transfer the cooked tortellini into the sauce and cover them with the sauce 12. Transfer into a serving dish, grate some Parmesan on top and enjoy 😉
