These Spinach & Feta Pancakes are the perfect way to switch up your Pancake Day #shorts #pancakeday

Ingredients: Pancake batter: 2 cups plain flour 2 1/4 soy milk 1 tbsp vanila extract 1-2 tbsp sugar 2 tbsp avocado oil Spinach & feta filling: 1 tbsp avocado oil 1 medium onion, diced 2 garlic cloves, roughly chopped 200g baby spinach 180g vg feta 2 tbsp nooch 1 tbsp lemon juice Salt and pepper to taste Method: 1. Make the batter in a bowl then allow to rest. 2. Heat up a on medium heat with oil. Add the onions then garlic and cook down. Season with salt and pepper, add the spinach and wilt down. 3. Add the feta, nooch, lemon juice and allow to simmer. 4. In another pan on low heat grease the pan then pour spoonful of the batter, allow to cook for 2-3 minutes then flip and repeat until all the batter is used up (approx 6 pancakes). 5.
