The earthy taste of boiled white lobia pairs beautifully with the spiced chicken keema, resulting in a hearty meal perfect for any occasion. Ingredients: 1/2 cup oil 2 onions, thinly sliced 8-9 green cardamoms 8-9 black peppercorns 7-8 cloves 2 black cardamoms 1 1/2 tbsp ginger garlic paste 400 grams chicken keema (minced chicken) 1 tbsp salt 1/2 tsp turmeric powder 1 tbsp red chili powder 3 tbsp dry coriander powder 1 bowl of yogurt 250 grams white lobia (boiled) Ginger, julienned (for garnish) Green chilies (for garnish) Fresh coriander (for garnish) Method: 1. Begin by heating 1/2 cup of oil in a pan and add 2 thinly sliced onions. Fry the onions until they turn golden brown. Remove the onions from the oil and set them aside. 2. In the same oil, add 8-9 green cardamoms, 8-9 black peppercorns, 7-8 cloves, and 2 black cardamoms. Let them release their aroma. 3. Add 1 1/2 tablespoons of ginger garlic paste and sauté until lightly browned. 4. Next, add 400 grams of chicken keema. Stir continuously to avoid clumping and ensure the keema browns evenly. 5. Add 1 tablespoon of salt, 1/2 teaspoon turmeric powder, 1 tablespoon red chili powder, and 3 tablespoons dry coriander powder. Continue browning the keema. 6. While the keema cooks, blend the fried golden onions with 1 bowl of yogurt until smooth. Add this mixture to the keema, and continue cooking until the oil separates from the masala. 7. Once the masala is ready, add 250 grams of boiled white lobia to the pan. Mix well and cook for 5 minutes, ensuring the flavors combine. 8. Cover the dish and let it simmer on very low heat (dum) for 10 minutes to bring everything together. 9. Once done, garnish with julienned ginger, green chilies, and fresh coriander. This White Lobia with Keema is now ready to be served! A delightful dish that combines the richness of spices with the soft, nutty taste of white lobia. Serve it hot with naan or rice.
