Soak dry fruits in orange juice for 3 days and refrigerate it. Mix it every day Dry ingredients: Maida 1 cup Baking powder 1 tsp Baking soda 1/4 tsp Pinch of salt Spice powder 1 tbsp - 1 stick cinnamon, 5 cloves and 1/2 nutmeg Wet ingredients : In a blender add 2 eggs, 1 tsp vanilla essence, 1/2 cup powder sugar, 1/2 cup sunflower oil / butter and blend it For caramel syrup : Caramelize 1/2 cup sugar and add 1/2 cup water to make a syrup 1. Sieve the dry ingredients and mix it well using a whisk 2. Gradually Add dry ingredients into the blended wet ingredients along with caramel syrup. Mix it using a whisk in one direction. 3. Strain any excess juice from the soaked dry fruits and coat it with a tbsp of maida 4. Add the coated dry fruits into the prepared cake mix. 5. Add orange marmalade, orange zest and lime zest. 6. Mix all of this slowly. Do not over mix. 7. Transfer the mix into a greased cake tin. 8. Place it in a pre heated cooker or vessel with heavy bottom. Cover it with a lid 9. Cook on low flame for 30 - 45 mins 10. Let the cake to cool completely before de-moulding.
