Squid Stir-Fried with Broccoli: A Delicious and Easy Recipe This recipe combines the delicate flavor of squid with the vibrant freshness of broccoli, resulting in a quick and healthy dish that's perfect for a weeknight meal. Ingredients: Squid: 1 kg sliced into rings or strips Broccoli: 1 kg cut into florets Onions: 2 quartered Celery: 2 sticks sliced diagonally Shallots: 4, sliced diagonally Oil: ½ cup Garlic: 4 cloves, minced Ginger: 2 tablespoons, grated Corn Flour: 1 tablespoon Dry Sherry: 2 tablespoons Oyster Sauce: 3 tablespoons Chicken Stock Cubes: 2 Soy Sauce: 1 tablespoon Sesame Oil: ½ teaspoon Sugar: ½ teaspoon Salt: To taste Instructions: 1. Prepare the Squid: Hold the squid firmly with one hand and gently pull the head and inside of the body out with the other hand. Remove the bone (a long thin piece of plastic) from the open end of the squid. Clean the squid under cold running water and rub off the outer skin. Cut the squid lengthwise down the center and spread it flat with the inside facing upwards. Make shallow diamond-shaped cuts on the squid with a sharp knife to tenderize it and help it curl attractively during cooking. 2. Prepare the Vegetables: Cut the onions into quarters, celery diagonally, and broccoli into florets, including the stalks. 3. Cook the Squid: Warm the oil in a pan over medium-high heat. Add the squid and cook until it curls, then remove from the pan and drain on absorbent paper. 4. Sauté the Vegetables: Add the onions, celery, broccoli, and ginger to the pan and fry for 5 minutes. 5. Make the Sauce: In a separate bowl, whisk together the corn flour with a little water until smooth. Add the remaining water, dry sherry, crumbled stock cubes, oyster sauce, soy sauce, sesame oil, sugar, and salt. Mix well and pour into the pan with the vegetables.
