Recipe for HALWA E ZARDAK carrots peeled and grated 1/2 kg butter 100g milk 1 cup (250ml) sugar 100g rosewater 1/2 tsp almonds chopped 3 tbsp pistachios chopped 3 tbsp Peel and grate the carrots. Add them to a cooking pot. Now add milk and bring it to boil and cover it. Cook until carrots are really soft and the milk water evapourates. Then add sugar and rosewater and simmer until the water is dry. Now add butter and simmer for 15-20 minutes. Stir it time to time, to avoid sticking to the pan until any excessive moisture evaporated. Serve it warm or cold as you like. Sprinkle the almonds and pistachios.
