This soup has an underrated star ingredient, lentils, which are a great plant based protein that also contains fiber to support your gut health while helping you get important minerals like iron and zinc. Serves: 6-8 ✅Ingredients: 1.5 lb ground turkey Salt & pepper to taste 1 tsp garlic powder, divided 1 tsp onion powder, divided 1 tsp coriander, divided 2 Tbsp EVOO 3 medium carrots, peel and chopped 4 stalks celery, sliced in half & chopped 1 medium white onion, diced 4 medium garlic cloves, minced (or 3 large) 1 cup dry lentils, rinsed 46 oz low sodium chicken broth (1 bottle + 1 can) 1 14.5 oz diced tomatoes can 1 14.5 oz tomato sauce can Directions: 1. Season the ground turkey with salt, pepper, 1/2 tsp garlic pwdr, 1/2 tsp onion pwdr, 1/2 tsp coriander. Add 1 Tbsp olive oil to a large skillet, brown it until it's not pink and set aside. 2. In a large pot, add 1 Tbsp EVOO on medium heat. Add diced carrots, celery, and onion. Cook until onions are translucent and add minced garlic. 3. To the pot, add cooked turkey, lentils, chicken broth, diced tomatoes, tomato sauce and remaining 1/2 tsp of spices. Salt and pepper to taste. Simmer for 30 minutes. 4. Serve & enjoy!
