Banana Caramel Muffin Recipe

ACCESS ALL MY RECIPES: http://bit.ly/sweety-youtube ⇩ FOLLOW ME ⇩ Instagram ►   / jonasszimmer   Facebook ►   / jonaszimmer.sweety   Makes 6 muffins INGREDIENTS: For the filling – 1 banana – 60g salted caramel For the cake batter – 2 bananas – 2 eggs – 40g sugar – 40g brown sugar – 4g cinnamon – 95g butter – 105g flour – 3g baking powder STEPS: For the filling Start by making small banana burgers filled with caramel. To make the banana burgers, I'll peel a banana and cut it into slices about 5 mm thick. I'll make two strips of six slices each and top them with salted caramel. I'll close each burger and place it in the freezer until I bake the muffins. For the banana cake batter, I'll peel two ripe bananas (ideally) and mash them with a fork in a bowl to make a purée. Then I'll add two eggs, white sugar, brown sugar, and ground cinnamon. I'll whisk it well before incorporating the melted butter, which has been cooled slightly. Finally, I'll add the sifted dry ingredients: flour and baking powder. I buttered a cake pan and put it in the refrigerator for about fifteen minutes. Now I'm taking it out to fill it with the banana cake batter. Fill it two-thirds full; that will be more than enough. It's best not to let it overflow, otherwise the muffin won't look quite as nice. Especially since you still need to add the banana-caramel burgers on top. I bake it at 180°C (350°F) for 25 minutes, and it should be perfectly cooked. Unmold while still warm.
