How to store Homemade Pizza Sauce: In Refrigerator: -Transfer in jar or zip lock bag in small batch sizes. -Can be kept in refrigerator for up to 1 month (yield: 3 kg approx.) In Freezer: -Transfer in zip lock bags preferably in small batches size so that you can stock them in freezer to save space. -Can be stored in freezer for up to 6 months. Recipe in Urdu: Ajza: -Tamatar (Tomatoes) 6 kg (ripe & red) -Hot water as required -Olive oil ¾ Cup (Substitute: Cooking oil) -Pyaz (Onion) chopped 3 medium -Lehsan (Garlic) chopped ½ Cup -Tomato paste ½ Cup -Sugar 4 tbs -Dried oregano 2 tbs -Lal mirch (Red chilli) crushed 2 tsp -Himalayan pink salt 2 tsp or to taste -Lal mirch powder (Red chilli powder) 1 tsp or to taste -Sirka (Vinegar) 6 tbs -Fresh basil leaves ½ Cup Directions: -Tamatar ko ache tarhan pani sa dho lein. -Knife ki madad sa tamatar ka bottom mein small cut laga lein. -Hot water mein tamatar dal ker ubal lein aur darmiyani ancch per tamatar gul janay tak paka lein (30 minutes). -Thanda ker lein. -Tomato skin ko peel ker lein aur boiled tamatar ki 1/3rd quantity ko knife ki madad sa coarsely chop ker lein & bad mein use kernay kliya side per rakh dein. -Remaining boiled tamatar ki 2/3rd quantity ko large bowl mein dal dein aur hand blender ki madad sa blend ker lein. -Karahi mein olive oil aur pyaz dal dein aur light golden ho janay tak fry ker lein. -Lehsan dal ker 2 minute kliya sauté ker lein. -Chopped tamatar aur tomato paste dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 minutes kliya paka lein. -Blended tomatoes,cheeni,dried oregano,lal mirch crushed,pink salt,lal mirch powder,sirka aur fresh basil leaves dal ker ache tarha mix karein aur tez ancch per 10-12 minutes kliya paka lein aur musalsal mix kertay rahein,partially cover karein aur halki ancch per 30-40 minutes kliya paka kein (mix in between). -Thanda ker lein.
