Ultimate crème brûlée With a rich, creamy vanilla custard and crunchy, caramelised topping, our crème brûlée makes the ultimate indulgent dessert classic French sweet Ingredients 2 cup double cream 100ml double cream 1 tsp vanilla extract 5 eggs yolk 50g caster sugar plus extra for the topping Method 1, Heat the oven to 180C/160C fan/gas 4.2, Pour double cream into a medium pan with the milk. 3, Put the egg yolks and sugar in a mixing bowl and whisk for 1 min until paler in colour and a bit fluffy. the pan with the cream on a medium heat and bring almost to the boil. As soon as you see bubbles appear round the edge, take the pan off the heat.4, Pour the hot cream into the beaten egg yolks, continuing whisk till combine then addvanilla extract.5, Set a fine sieve over a large wide jug or bowl and pour the hot mixture through to strain 6, Pour the cream mix in-ramekins dish, pour hot water into the roasting tin to come about 1.5cm up the sides of the ramekins. 7, Bake in the oven @180 c fan for 30-35 mins until the mixture is softly set. 8, leave it to cool for a couple of minutes only, then put in the fridge to cool completely.9, when ready to serve, sprinkle 1½ tsp of caster sugar over each ramekin and spread it out with the back of a spoon, then use a blow torch to caramelise it.
