
Moose and elk steaks with sautéed mushrooms and red wine sauce!! #wildgame #steak
Ingredients 4 steaks 2 tablespoons olive oil Salt and pepper to taste 6 tbsp unsalted butter divided 2 tbsp minced shallot 4 cloves of garlic 1 cup red wine 1 cup beef stock 10 oz mushrooms white or brown Directions Take steaks out and let them reach room temperature. takes about an hour. Cover with olive oil and salt and pepper. Melt a tbsp of butter in a small sauce pan over med heat. sauté the shallots and garlic til caramelized. Stir in wine and pepper and bring to a slow boil. let it reduce to 1/2. Stir in beef stock and bring to a low boil. Reduce to 1/2. Remove from heat. Sauté mushrooms in an oven safe skillet with a tbsp of butter. You can cook your steaks how you like them. Here's how I did them. Pre heat smoker or oven to 350°Fahrenheit. Using the same skillet you used for the mushrooms, melt 2 tbsp of butter. Add a tbsp olive oil. Sear steak 2 min on both sides. Place in smoker or oven for about 8 min for med rare. Since there's not as much fat as beef, cooking longer will dry them out. Poor your drippings back in the sauce and heat with 2 tbsp of butter.
