I love that it’s completely customizable to whatever veggies you have on hand, and of course, is totally oil-free! I encourage you to use up whatever veggies you have, but here’s what I used👇 INGREDIENTS 🥕1 onion 🥕2 stalks celery 🥕2 large carrots 🥕1 red bell pepper 🥕½ large zucchini 🥕16oz mushrooms 🥕1 cup frozen corn 🥕1 cup frozen peas 🥕½ kohlrabi (about 1 cup diced) 🥕2 blocks extra firm sprouted tofu or 1 bag frozen, pre-shelled edamame 🥕4 cups cooked rice (I used brown) 🥕½ cup soy sauce 🥕¼ cup rice vinegar 🥕2 tbs coconut sugar 🥕1 tsp black salt, or more to taste (or sub regular salt) 🥕Optional toppings: furikake, green onions, cashews, sesame seeds, black salt INSTRUCTIONS 🌱Dice all veggies into small cubes and add to a large stock pot. 🌱Saute on medium-high until the veggies cook down a bit. 🌱Dice tofu into small squares and add to veggies. 🌱Add cooked rice and mix well. 🌱Whisk together soy sauce, rice vinegar, sugar, and salt, then add to your fried rice mix. 🌱Cook for a few more minutes, taste, and adjust seasonings as desired. 🌱Top with optional toppings and enjoy!
