This helps in softening them for cooking. Cook the Lentils and Beans: In a pressure cooker, add the soaked dal and rajma with enough water (about 4 cups). Cook for 4-5 whistles or until soft and well-cooked. If using a stovetop pot, cook the lentils and beans for 45 minutes to 1 hour, or until tender. Prepare the Masala: In a large pan or kadhai, heat ghee or butter over medium heat. Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant. Add the pureed tomatoes and cook for 5-6 minutes, until the oil begins to separate from the masala. Add Spices: Add the red chili powder, garam masala and salt. Stir well and cook for another 2-3 minutes. Combine Dal with the Masala: Add the cooked dal and rajma to the masala mixture. Stir to combine, and add a little water if the dal is too thick. Let it simmer on low heat for 15-20 minutes so the flavors can meld together. Add Cream and Kasuri Methi: Stir in the fresh cream and kasuri methi, and simmer for another 5-10 minutes until creamy and well-blended.
