🌿 Ingredients: Mutton – 750g with bones Aloo (Potatoes) – 3 medium-sized Piyaaz (Onion) – 3 medium-sized Ginger Garlic Paste – 2 tbsp Dahi (Yogurt) – 50g Dry Masale: Haldi (Turmeric) – 1/2 tbsp Namak (Salt) – as per taste Dhaniya Powder (Coriander Powder) – 2 tbsp Kasturi Methi – 1 tbsp Garam Masala Powder – 1 tbsp Crushed Kali Mirch (Black Pepper) – 1 tsp Akkhe Khade Masale (Whole Spices): Laung (Cloves) – 4 Dalchini (Cinnamon) – 1-inch piece Shahi Zeera – a small pinch Tez Patta (Bay Leaves) – 2 Badi Elaichi – 1 Choti Elaichi – 2 Hare Masale (For Green Paste): Hari Mirch (Green Chillies) – as per your spice preference Hara Dhaniya (Coriander) – 1 fistful Pudina (Mint) – 1 fistful Hari Piyaaz (Onion greens) – 1 fistful Lassun (Garlic) – 1 whole Adrak (Ginger) – 1-inch piece Nimbu Ka Ras (Lemon Juice) – 1/2 lemon 🌿 Procedure: 1️⃣ Green Paste Preparation: Hara dhaniya, pudina, hari mirch, Hari piyaaz, poora lassun aur adrak ko mixi mein grind kar ke smooth green paste bana lo. Usmein nimbu ka ras daal ke side mein rakh do. 2️⃣ Mutton Preparation: Cooker mein 50ml tel garam karo. Usmein mutton daalo aur fry karo jab tak color change na ho jaaye. Ab namak (salt) aur haldi (turmeric) daal do. Usmein woh hara paste daal do jo humne pehle banaya tha. Sab kuch ache se mix karo. Half glass paani daalo, cooker ka lid band kar do aur 3-4 seeti (whistle) tak ya mutton tender hone tak cook karo. 3️⃣ Aloo (Potato) Preparation: Ek tope mein 50ml tel garam karo. Usmein aloo (potatoes) fry karo jab tak golden brown na ho jaaye. Aloo nikal ke side mein rakh do. 4️⃣ Gravy Preparation: Jo tel bach gaya tha usmein akkhe khade masale (laung, elaichi, dalchini, etc.) daalo. Chopped piyaaz daal ke fry karo jab tak golden brown na ho jaaye. 2 tbsp ginger garlic paste daal ke thoda saute karo. Ab usmein woh mutton daal do jo cooker mein cook kiya tha. Ab dry masale (dhaniya powder, garam masala, kasturi methi, etc.) daal do. Dahi (yogurt) bhi daal do aur sab kuch ache se mix karo. Fried aloo bhi daal do. Sab kuch mix kar ke bhuno jab tak tel side se chutne lage aur aloo bhi ache se pak jaaye. Agar gravy thick chahiye toh paani mat daalo, lekin agar thoda liquid gravy pasand hai toh apne hisaab se paani add kar sakte ho. 5️⃣ Final Touch: 4-5 whole hari mirch daal do spicy flavor ke liye. 5 minute tak cook karo.
