It’s comfort in a crockpot. Slow cooker chicken & gravy is like a Sunday roast all in one pot. I combine a beefy mushroom gravy with a creamy chicken gravy to top our chicken & vegetables. But here’s a recipe for you, without many measurements 😜 Ingredients- Chicken (I used boneless breasts) Mushrooms (I prefer button mushroom caps ) whole not sliced. Shallot, finely diced Beef & chicken stock Red & white wine Cream Worcestershire sauce Butter & olive oil Carrots I start with the mushroom gravy by sautéing the shallots in some olive oil before adding 1/2 stick of butter. After the butter melts I add the mushrooms. Season with salt & pepper. Add a splash of Worcestershire sauce followed by about 1/2 cup of red wine. Add about 1/4 cup of beef broth & bring to a boil. Add a lid & lower to a simmer for about 1 hour. Then I peel & slice my carrots & add to the slow cooker. Add salt & pepper & then season the chickens with salt, pepper, garlic powder & thyme. Add to the slow cooker, set to low. Time to start the creamy chicken gravy by making a roux. I add 2 tbsn butter to a pot & allow to melt. I then add 2 tbsn flour (I use gluten free) whisk to combine. I add about 1/4 cup of white wine while whisking to avoid lumps. Then add chicken broth (about 3/4 cup), salt, pepper & I like to add dill. Lastly I add about 1/4 cup of heavy cream. Allow to thicken by raising the heat until the gravy bubbles. Once it bubbles lower to a simmer. Now it’s time to add the gravies to the slow cooker. I top the chicken & carrots with the beef/mushroom gravy. Then I top that with the creamy chicken gravy. I do not stir, but allow to cook on low until the chicken reaches an internal temperature of 165 & the carrots are tender, about 6-7 hours (or high for 3) Once it’s done remove the chicken & stir the gravies together. Top your chicken with some of the gravy. I made a side of masked potatoes which I topped with the gravy. Enjoy!
