🌶️ Crispy Peri Peri Bites (Iftar Special) Servings: 4 | Prep Time: 15 mins | Cook Time: 10 mins Ingredients: 250g boneless chicken (minced or small cubes) or paneer for veg 1 tbsp ginger-garlic paste 2 tbsp peri peri sauce (or 1 tbsp chili powder + 1 tsp paprika + 1 tsp vinegar) 1 tsp lemon juice 1 tsp cumin powder 1 tsp black pepper 1 tsp salt (adjust to taste) 2 tbsp cornflour (for crispiness) 2 tbsp all-purpose flour 1 egg (optional, for binding) Breadcrumbs Oil for deep frying or shallow frying Instructions: Marinate: In a bowl, mix chicken/paneer with ginger-garlic paste, peri peri sauce, lemon juice, cumin, black pepper, and salt. Let it rest for 15-20 minutes. Prepare Coating: In a separate bowl, mix cornflour + all-purpose flour. Dip bites in flour → beaten egg → breadcrumbs. Shape & Fry: Roll the mixture into small bite-sized balls or patties. Heat oil in a pan on medium heat. Fry until golden brown and crispy (3-4 minutes per side). Drain on a paper towel to remove excess oil. Serve: Drizzle with extra peri peri sauce or mayo. Garnish with chaat masala or lemon wedges. Notes: For extra crispiness, double-fry the bites (fry once, cool, then fry again for 1 minute).
