SOURDOUGH DONUTS 🍩 200 g sourdough starter 120 g eggs (2 pcs) 235 g flour 50 g sugar 7 g salt 100 g butter zest of 1 orange or 1/2 tsp of vanilla paste YEAST METHOD DONUT🍩 20 g fresh yeast (7 g instant) 120 g eggs (2 pcs) 90 g milk (water) 335 g flour 50 g sugar 7 g salt 100 g butter zest of 1 orange or 1/2 tsp of vanilla paste FOR FRYING: 700 g vegetable oil (I used sunflower oil) DONUT POWDER: 70 g fine sugar 1/2 tsp cinnamonpowder PROCESS: Mix all ingredients except butter. Knead the dough until smooth. Add butter in 2-3 batches, adding each new portion after the dough has completely absorbed the previous portion of butter. Cover the dough and leave in a warm place until it has tripled in size. Roll out the dough to a thickness of ~ 2 cm. Cut out circles using a glass or donut mold. Leave the dough circles to rise in a warm place until fluffy. Pour vegetable oil into a pan and heat to 180°C, 360°F. Fry the donuts for about 1-2 minutes on each side until golden brown. Place on a paper towel to remove excess oil. Roll the doughnuts in fine sugar and cinnamon or sprinkle with powdered sugar. You can fill the donuts with jam or custard. And best of all, both!
